Creamy Basil-Lime-Ginger Dressing
|Nut butter/Seed butter||2 Tablespoon (almond, cashew, sunflower seed, tahini, etc)|
|Fresh lime juice||2 Tablespoon|
|Lime zest||1 Teaspoon|
|Fresh basil||1 Cup (16 tbs)|
|Fresh chives/Green onion||1 Cup (16 tbs)|
|Fresh ginger||1 Teaspoon, grated|
|Water||4 Tablespoon (more or less, for the consistency you want)|
1. Combine all of the ingredients in a blender or food processor.
2. Blend until smooth and creamy.
3. Use immediately while fresh or store in a sterilized bottle in the refrigerator until required but it is best to use on the same day.
4. This dressing works really well drizzled over sweet potatoes and tossed with some fresh greens. Or, you can leave it thicker and use it as a dip for some fresh cucumber slices and cherry tomatoes. Try it with different dishes and see how you like it. The best way to learn is to experiment!
For a milder ginger flavor, squeeze the juice from the grated pulp rather than adding it all.
Add a pinch of salt if you need it, but if you use fresh ingredients you might not need any.
