Cucumber Yogurt Dressing

Ingredients
  Cucumber 1 Large, pared
  Yoghurt 1 Cup (16 tbs)
  Finely chopped fresh mint 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Mixed salad greens 1 Cup (16 tbs) (adjust quantity as needed)
Directions

MAKING
1) Slice the cucumbers into long quarters.
2) Slice each quarter crosswise into thin slices.
3) Into a medium bowl, add in the yoghurt, cucumber, mint and salt. Mix well.
4) Cover the bowl and refrigerate for about 60 minutes.

SERVING
5) Serve the Cucumber Yoghurt Dressing drizzled over a bowl of mixed salad greens.
