1. In a bowl, whisk together apple, shallots, ginger, vinegar, and mustard in a small bowl with a pinch of salt and pepper. Slowly whisk in olive oil. Makes about 1/2 cup.
2. Refrigerate for up to one week. Take dressing out of refrigerator 30 minutes before using.
