Sherley's Creamy Dressing for Red Lettuce or Green
|Lettuce||3⁄4 Pound (Red Or Green)|
|Dijon mustard||1 1⁄2 Teaspoon|
|Olive oil||1⁄4 Cup (4 tbs) (Of Good Quality)|
|Red wine vinegar||2 Tablespoon (Scant Measure)|
|Dried basil/1 teaspoon chopped fresh basil||1⁄4 Teaspoon|
|Chopped fresh tarragon/1/2 teaspoon dried tarragon leaves||1 1⁄2 Teaspoon|
|Freshly ground black pepper||To Taste|
|Garlic clove||1 Small|
1)After washing greens drain it and pat dry with paper towels.
2)Place in salad bowl or on individual salad plates.
3)Further beat mustard and mayonnaise.
4)Add oil in a very thin stream, beating constantly with wire whisk.
5)Dressing should remain thick.
6)Beat in vinegar in thin stream.
7)Dressing should be thinner but still creamy.
8)Add fresh chopped herbs along with salt and pepper.
9)Put garlic through press and beat in.
10)Serve on the salad.
