Fish With Yoghurt Dressings

Ingredients
  Cod fillets 1 1⁄4 Pound
  Salt To Taste
  Pepper To Taste
  Lemon juice 1 Tablespoon
  Butter 1 Ounce
  Unsweetened yogurt 5 Ounce (1 Carton)
  Diced cucumber 4 Ounce
  Green grape halves 2 Ounce, deseeded
  Mushrooms 2 Ounce, sliced
Directions

MAKING
1) In a microwavable, shallow dish arrange the cod fillets.
2) Sprinkle the fish with lemon juice, salt and pepper. Place a dot of butter over each fillet.
3) Cover the dish and microwave for about 5 minutes.
4) Let the mixture rest in the oven for 5 minutes.
5) In a bowl, mix together yoghurt, cucumber, grapes, mushrooms, salt and pepper.
6) Mix well and transfer onto the cod fillets, spreading evenly.
7) Cover the dish once more and microwave for 3 more minutes.
8) Let the fish rest for 5 minutes before serving.

SERVING
9) Serve the Fish with Yoghurt Dressing garnished with a sprinkling of chopped parsley.
