Ginger Soy Dressing

Ingredients
  V8 vegetable juice 3⁄4 Cup (12 tbs)
  Vegetable oil 1⁄3 Cup (5.33 tbs)
  Soy sauce 2 Tablespoon
  Red wine vinegar 2 Tablespoon
  Sugar 1 Tablespoon
  Grated fresh ginger 1 Tablespoon
  Dry sherry 1 Tablespoon
Directions

1. Combine all ingredients in a covered jar.
2. Shake until well blended.
3. Cover and let it refrigerate until serving time, at least 2 hours.
4. Shake again before using.
SERVING
5. Serve over salad greens or pasta salads.
