Salmon And Puy Lentil Salad With Olive Dressing

Ingredients
  Kalamata olives 3 Ounce, stoned (85 Gram)
  Olive oil 5 Tablespoon
  Red wine vinegar 2 Tablespoon
  Garlic 1 Clove (5 gm), crushed
  Dijon mustard 1 Teaspoon
  Chopped basil/A dash of pesto 2 Tablespoon
  Small capers 1 Tablespoon
  Fine green beans 200 Gram, halved (1 Pack)
  Eggs 4 (Depending On How Much Salmon You Have)
  Cooked puy lentils 500 Gram (2 X 250 G Pouches, We Used Merchant Gourmet)
  Tomatoes 4 Large, deseeded and roughly chopped
  Cooked salmon 8 Ounce, flaked into large chunks (200 Gram, Use Leftovers)
  Rocket leaves 1 Cup (16 tbs) (Good Handful)
Directions

GETTING READY
1. In a bowl, chop bout half of the olives and mix it in with the remaining dressing ingredients

MAKING
2. In a saucepan, boil the green beans and five minutes and run them under cold water
3. Add eggs in cold water, bring to a boild and leave to cook for five minutes
4. In a mircowave safe bowl, add the lentils and cook them in the microwave for two minutes
5. Add them to the bowl, add tomatoes and dressing and toss it around a little; add whole olives and green beans as well and toss around a little more

SERVING
6. Place the eggs and salmon on top, scatter with rocket and drizzle the rest of the dressing
7. Serve with crusty bread
