Smoked Haddock With Tomatoes And Chive Dressing

Ingredients
  White wine vinegar 2 Tablespoon
  Bay leaf 1
  Smoked haddock fillet 1 , trimmed into two neat portions (Undyed)
  Cooked new potatoes 8 Ounce, sliced (200 Gram)
  Ripe tomatoes 3 , sliced
  Shallot 1 , finely chopped
  Olive oil 3 Tablespoon
  Dijon mustard 2 Teaspoon
  Chives 1 Ounce, finely snipped (1 Small Bunch)
Directions

MAKING
1, In a small bowl, whisk the dressing ingredients along with a teaspoon of water and set aside
2. Add water in a shallow pan, add vinegar and bay leaf and bring it to a boil; turn the heat down
3. Add the fish in and poach it for five minutes; remove and set aside

SERVING
4. In the centre of the plates, pile the potatoes and lay tomato slices around them
5. Add vegetables with some dressing and peel the skin off haddock and make it sit over the potatoes
6. Add the rest of the dressing on top and serve
