A wonderful dressing for a simple salad of sliced Windset Farms™ tomatoes, red onions and crumbled feta cheese, or as an alternative to the classic Tomato and Mozzarella Salad with fresh basil. It also makes a great dip for vegetables!
1 Pound, halved, smoked (Vine ripened roma tomatoes)
Cracked black pepper
Red wine vinegar/Champagne vinegar
1 Cup (16 tbs)
3 Cup (48 tbs)
1. Cut roma tomatoes in half, season with some olive oil, salt and cracked black pepper. Place on a smoker for about an hour (on a hot smoke).
2. Once done, put the smoked tomatoes in a blender.
3. Add grainy mustard, honey, red wine vinegar and blend until smooth, drizzling canola oil ino the blender.
4. Serve to garnish a tomato salad with some goat cheese. You may also use this dressing as a dip or brush it on some grilled bread.
If doing a cold smoke for the tomatoes, place them in the smoker for about 2 - 3 hours.
