Sweet and Sour Dressing
|Brown sugar||1⁄4 Cup (4 tbs)|
|Unsweetened pineapple juice||1 1⁄4 Cup (20 tbs)|
|Tabasco sauce||3 Drop|
|Freshly ground black pepper||1⁄2 Teaspoon|
|Pineapple jam||4 Tablespoon|
|Vinegar||2⁄3 Cup (10.67 tbs)|
Peel and finely chop the onions.
Put the sugar and pineapple juice in a saucepan and heat, stirring to dissolve the sugar.
Add the onion and bring to the boil.
Simmer until the onion is tender.
Stir in the Tabasco, pepper, jam and vinegar.
Continue simmering for 10-15 minutes to reduce the sauce and thicken.
Allow to cool, then chill and serve with salads such as chicken or turkey, pasta, celery, Belgian endive, fruit, cooked meat and avocado.
