|Roquefort/Any other blue veined cheese||2 Ounce|
|Lemons||2 (Grated Rind And Juice)|
|Cream/Half and half||6 Tablespoon|
|Oil||1⁄4 Cup (4 tbs)|
|Port wine/Madeira wine||1⁄4 Cup (4 tbs)|
|Hot water||6 Tablespoon|
|Cayenne pepper||1⁄2 Teaspoon|
Push the cheese through a strainer until smooth, then mix with the remaining ingredients to form a creamy dressing.
This dressing may be served with vegetable salads as well as chicken, game and pasta salads.
