Baked Vegetables In Thousand Island Dressing

Ingredients
  Shelled green peas 100 Gram
  French beans 250 Gram, trimmed and cut into halves
  Carrots 200 Gram, diced
  Cauliflower 200 Gram, cut in florets
  Baby corn 250 Gram, cut into halves on the slant
  Thousand island dressing 2 Cup (32 tbs)
  Egg yolks 2 , beaten
  Salt 1 Teaspoon
  Ground black pepper 1 Teaspoon
Directions

GETTING READY 1) Preheat the oven. MAKING 2) In a bowl, boil salted water and cook green peas in it till tender and then refresh and drain thoroughly. 3) In separate bowls, boil some more salted water and blanch french beans and carrots separately for 2-3 minutes and cauliflower for 4-5 minutes. 4) Refresh and drain all the vegetables. 5) In a mixing bowl, mix all the vegetables. 6) In an another bowl, mix thousand island dressing with egg yolks. (This helps to prevent the dressing from curdling while baking.) 7) Over the vegetables, spoon the dressing and mix well. 8) Adjust the seasoning after tasting. 9) Transfer it to the ovenproof dish and bake in the preheated oven for 10-15 minutes till the top is golden. SERVING 10) Serve hot.
