Lime Mint Dressing

Ingredients
  Olive oil/Good-quality veg-table salad oil 3⁄4 Cup (12 tbs)
  Lime juice 1⁄4 Cup (4 tbs)
  Salt 1 Teaspoon
  White pepper 1⁄4 Teaspoon
  Finely chopped parsley 1 Teaspoon
  Finely chopped mint 1 Teaspoon
  Finely chopped chives 1 Teaspoon
  Prepared mustard 1 Teaspoon
Directions

Mix all the ingredients, place a cube of ice in the dressing and beat until the mixture thickens to the consistency of medium cream sauce.
Use for tossed greens or coleslaw.
