In skillet cook sausage, onion, and celery till sausage is browned and vegetables are tender; drain.
Stir in poultry seasoning and pepper.
Prepare potatoes according to package directions, except reduce salt to 1/2 teaspoon.
Beat in eggs.
Stir potatoes into meat mixture.
Turn into a 2-quart casserole.
Bake, covered, in a 325°F oven for 30 minutes.
