Potato Sausage Dressing

Ingredients
  Bulk pork sausage 1 Pound
  Chopped onion 1 Cup (16 tbs)
  Finely chopped celery 3⁄4 Cup (12 tbs)
  Poultry seasoning 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Instant mashed potatoes 1 1⁄2 Cup (24 tbs) (From Package)
  Eggs 2
Directions

In skillet cook sausage, onion, and celery till sausage is browned and vegetables are tender; drain.
Stir in poultry seasoning and pepper.
Prepare potatoes according to package directions, except reduce salt to 1/2 teaspoon.
Beat in eggs.
Stir potatoes into meat mixture.
Turn into a 2-quart casserole.
Bake, covered, in a 325°F oven for 30 minutes.
