Carrot Slaw With Vidalia Onion And Lemon Dressing
|Carrots||4 Large (About 2 Cups Grated)|
|Vidalia onion/Any sweet onion, about 1/2 cup||1 Medium|
|Grated lemon zest||1 Teaspoon|
|Olive oil||2 Tablespoon|
|Lemon juice||1 Tablespoon|
|Ground black pepper||To Taste|
Scrape and grate the carrots.
Mince or grate the onion.
(Using a food processor is the easy way to prepare both vegetables at once.) Add the remaining ingredients and toss to blend.
(A lot of pepper goes well with this salad.) If omitting salt, you may wish to add extra lemon juice.
Chill to allow the flavors to blend before serving.
