Roast Duck With Apple Dressing

Ingredients
  Oven ready duck 5 Pound
  Salt 1 Teaspoon
  Bread crumbs 3 Cup (48 tbs)
  Diced onion 1 Tablespoon
  Diced peeled tart apple 3 Cup (48 tbs)
  Pepper 1⁄2 Teaspoon
  Poultry seasoning 2 Teaspoon
  Chopped parsley 1 Tablespoon
  Sage 1 Teaspoon
Directions

Preheat oven to 325°.
Wash duck thoroughly and pat dry with absorbent paper.
Rub cavity with salt.
Combine remaining ingredients in mixing bowl; stuff cavity and close with skewers and string.
Place on rack in shallow roasting pan.
Roast 2-2 1/2 hours (or 30 minutes per pound).
Remove skewers and string.
Place duck on heated serving platter.
