Cucumber Melon Salad With Raspberry Vinaigrette
|Cucumber||1 , scrubbed and partially peeled to leave some dark green for color|
|Cantaloupe||1⁄2 Large, seeded|
|Radishes||1 Bunch (100 gm), scrubbed|
|Raspberry vinegar||1⁄4 Cup (4 tbs)|
|Freshly ground black pepper||To Taste|
|Leaf lettuce leaves||4 , rinsed and dried|
Cut cucumber into bite-size pieces.
Cut cantaloupe into cubes or small melon balls.
Thinly slice the radishes.
In a medium bowl, combine cucumber, cantaloupe and radishes.
Toss with vinegar and sprinkle with pepper.
Serve chilled on individual plates lined with leaf lettuce.
