Fresh Tomato Chive Dressing

Ingredients
  Tomatoes 2 Medium, diced
  Cider/White wine vinegar 2 Tablespoon
  Vegetable oil 2 Tablespoon
  Dijon mustard 2 Teaspoon
  Garlic 1 Clove (5 gm), minced
  Chopped chives/Chopped green onion 3 Tablespoon
  Freshly ground pepper To Taste
  Crumbled feta cheese 1⁄4 Cup (4 tbs)
Directions

In small bowl, combine tomatoes, vinegar, oil, mustard, garlic (if using), chives, and pepper to taste; mix well.
Cover and refrigerate for up to 3 days.
Just before serving, stir in cheese.
Makes 2 cups/500 Ml
