Thousand Island Dressing
|Low fat cottage cheese||2 Cup (32 tbs)|
|Buttermilk||1⁄2 Cup (8 tbs)|
|Catsup||1⁄4 Cup (4 tbs)|
|Prepared mustard||1⁄4 Teaspoon|
|Pickle relish||1⁄4 Cup (4 tbs)|
|Finely chopped green onion||1 Teaspoon|
|Chopped green olives||2 Teaspoon|
Combine cheese, buttermilk, vinegar, catsup, and mustard in blender or food processor.
Remove to bowl and add relish, onion, and olives.
Store tightly covered in refrigerator.
Variation: For corn-free, use 1/4 c. tomato sauce, 1 tsp chopped capers, 1/4 tsp dill weed, and 1/4 tsp onion powder instead of catsup, mustard, and pickle relish.
Green olives are optional.
