Avocado With Jalapeno Dressing
|Jalapeno dressing||2 Tablespoon|
|Ripe avocados||2 Large|
|Red lettuce leaves||8 , washed and crisped|
|Cucumber||1 Small, thinly sliced|
Prepare Jalapeno Dressing; set aside.
Cut off peel and white membrane from oranges; cut crosswise into thin slices.
Cut avocados in half lengthwise; pit and peel.
Fan each avocado half by slicing lengthwise at 1/2-inch intervals, without cutting through tapered end of fruit; then push down gently on back of avocado with flat of a knife.
Place lettuce leaves on 4 dinner plates; place an avocado fan (pit side down) on each plate.
For each serving, arrange orange and cucumber slices separately around avocado.
Spoon 2 to 3 tablespoons of the dressing in a band over avocado.
Garnish with cilantro, if desired.
