Romaine Salad With Avocado Dressing
|Unsweetened grapefruit juice||1⁄3 Cup (5.33 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Oil free italian dressing mix||1 Tablespoon|
|Vegetable oil||2 Teaspoon|
|Mashed ripe avocado||1⁄4 Cup (4 tbs)|
|Shredded romaine lettuce||8 Cup (128 tbs)|
|Julienned sweet red pepper||1 Cup (16 tbs)|
|Grated parmesan cheese||2 Tablespoon|
Combine first 4 ingredients in a small jar; cover tightly, and shake vigorously to blend.
Add avocado; cover and shake well.
Combine lettuce and pepper strips in a large bowl; drizzle avocado mixture over salad, and toss gently.
Place 1 cup lettuce mixture on each individual salad plate, and sprinkle servings evenly with cheese.
