Double Corn Dressing
|Unseasoned cornbread stuffing cubes||12 Ounce (1 Package)|
|Onion||1 Medium, finely chopped|
|Sweet red pepper||1⁄2 Medium, chopped|
|Sweet green pepper||1⁄2 Medium, chopped|
|Sweet yellow pepper||1⁄2 Medium, chopped|
|Garlic powder||1 Teaspoon|
|Eggs||3 , lightly beaten|
|Butter||1⁄2 Cup (8 tbs), melted|
|Chicken broth||1 Cup (16 tbs)|
In a large bowl, combine the stuffing, onion, sweet peppers and seasonings.
Add the eggs, corn and butter; toss to coat.
Stir in chicken enough broth to achieve the desired moistness.
Spoon the stuffing into a greased 3-qt. baking dish.
Cover and bake at 350 degree for 25 minutes.
Uncover and bake 15-20 minutes longer or until golden brown.
