Orange Onion Salad With Celery Seed Dressing
|Almonds||1⁄2 Cup (8 tbs), sliced|
|Dark salad greens||4 Cup (64 tbs) (Romaine, Escarole, Watercress, Etc.)|
|Canned mandarin oranges||11 Ounce, drained (1 Can)|
|Red onion||1 Small, sliced thin and separated into rings|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Cider vinegar||2 Tablespoon|
|Honey||1⁄4 Cup (4 tbs)|
|Celery seed||1⁄2 Teaspoon|
Spread almonds on a baking sheet and bake at 300° for approximately 10 minutes until golden. Watch carefully, so they do not burn. Let cool.
Combine lettuce, oranges, and onion in salad bowl. Add toasted almonds.
Combine dressing ingredients in a blender and whirl until well blended. Toss with salad mixture until thoroughly coated.
