Minted Lime Dressing
|Low fat vanilla yogurt||1⁄2 Cup (8 tbs)|
|Vegetable oil||1⁄3 Cup (5.33 tbs) (Acceptable)|
|Grated onion||1 Tablespoon|
|Low fat cottage cheese||1⁄2 Cup (8 tbs)|
|Fresh lime juice||1⁄4 Cup (4 tbs)|
|White pepper||1 Dash|
|Finely chopped fresh mint||2 Tablespoon|
Combine all ingredients except mint in a blender or the work bowl of a food processor fitted with a metal blade.
Process until smooth.
Stir in mint, cover and refrigerate for several hours to allow flavors to blend.
This dressing is excellent with fruit salads.
