Raw Corn And Radish Salad With Spicy Lime Dressing

Ingredients
  Fresh lime juice 2 Tablespoon
  Jalapeno 1 Small, seeded and coarsely chopped
  Honey 1 1⁄2 Teaspoon
  Cumin 1⁄4 Teaspoon
  Vegetable oil 1⁄4 Cup (4 tbs)
  Kosher salt To Taste
  Freshly ground black pepper To Taste
  Fresh corn kernels 4 Cup (64 tbs)
  Radishes 6 Medium, halved and thinly sliced crosswise
  Coarsely chopped flat leaf parsley 1⁄2 Cup (8 tbs)
  Red onion 1⁄4 Small, thinly sliced
Directions

1. In a blender, puree the lime juice, jalapeno, honey and cumin. With the machine on, add the vegetable oil. Season with salt and black pepper.
2. In a large bowl, toss the corn with the radishes, parsley, red onion and dressing. Season the salad with salt and black pepper, transfer to plates and serve.
