Raw Corn And Radish Salad With Spicy Lime Dressing
|Fresh lime juice||2 Tablespoon|
|Jalapeno||1 Small, seeded and coarsely chopped|
|Honey||1 1⁄2 Teaspoon|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Kosher salt||To Taste|
|Freshly ground black pepper||To Taste|
|Fresh corn kernels||4 Cup (64 tbs)|
|Radishes||6 Medium, halved and thinly sliced crosswise|
|Coarsely chopped flat leaf parsley||1⁄2 Cup (8 tbs)|
|Red onion||1⁄4 Small, thinly sliced|
1. In a blender, puree the lime juice, jalapeno, honey and cumin. With the machine on, add the vegetable oil. Season with salt and black pepper.
2. In a large bowl, toss the corn with the radishes, parsley, red onion and dressing. Season the salad with salt and black pepper, transfer to plates and serve.
