Fish With Herbed Yogurt Dressing

Ingredients
  Fish fillets 16
  Parsley stalks 3
  Celery leaves 1 Tablespoon
  Black peppercorns 1 Teaspoon
  Bouquet garni 1
  Dry white wine 125 Milliliter (1/2 Cup)
  Water 500 Milliliter (2 Cups)
  Herbed yogurt 1⁄2 Cup (8 tbs) (Double Quantity)
Directions

Check fish fillets for bones and set aside.
Combine parsley, celery, peppercorns, bouquet garni, wine and water in frying pan.
Bring to boil, reduce heat and simmer for 5 minutes.
Pour dressing into a heatproof container and stand in a bowl of very hot water.
Stir occasionally so dressing heats through.
Simmer fish fillets in cooking liquid for 3-5 minutes until fish flakes with fork (cooking time depends on thickness of fillets).
Drain fish and arrange on a serving plate.
Spoon dressing over and serve.
