|Packed mint leaves||1⁄2 Cup (8 tbs)|
|Onion||1⁄2 Small, very finely chopped|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Rice vinegar||2 Tablespoon|
|Freshly ground pepper||To Taste|
In a blender, combine the cilantro, mint, onion, oil and vinegar and puree until smooth.
Season the dressing with salt and pepper.
