Cilantro Dressing

  Packed cilantro leaves 1 Cup (16 tbs)
  Packed mint leaves 1⁄2 Cup (8 tbs)
  Onion 1⁄2 Small, very finely chopped
  Vegetable oil 1⁄4 Cup (4 tbs)
  Rice vinegar 2 Tablespoon
  Freshly ground pepper To Taste
  Salt To Taste

In a blender, combine the cilantro, mint, onion, oil and vinegar and puree until smooth.
Season the dressing with salt and pepper.
