Chicken In Cantaloupe With Curry Dressing
|Cold cooked chicken||2 Cup (32 tbs), cut in bite-size pieces|
|Thinly sliced celery||1⁄4 Cup (4 tbs)|
|Thinly sliced green onion||1⁄4 Cup (4 tbs)|
|Seeded diced red bell pepper/Seeded diced green bell pepper||1⁄4 Cup (4 tbs)|
|Chopped salted peanuts||1⁄4 Cup (4 tbs)|
Cut each cantaloupe in half; scoop out and discard seeds.
Remove melon fruit with a melon ball cutter leaving about 1/4 inch of the fruit next to the rind.
Set melon balls and hollow shells aside to drain.
Mix together chicken, celery, onion, and pepper.
Prepare curry-peanut dressing and stir into chicken mixture along with melon balls.
Cover and refrigerate.
