Chicken In Cantaloupe With Curry Dressing

Ingredients
  Cantaloupes 2 Medium
  Cold cooked chicken 2 Cup (32 tbs), cut in bite-size pieces
  Thinly sliced celery 1⁄4 Cup (4 tbs)
  Thinly sliced green onion 1⁄4 Cup (4 tbs)
  Seeded diced red bell pepper/Seeded diced green bell pepper 1⁄4 Cup (4 tbs)
  Lettuce leaves 5
  Chopped salted peanuts 1⁄4 Cup (4 tbs)
Directions

Cut each cantaloupe in half; scoop out and discard seeds.
Remove melon fruit with a melon ball cutter leaving about 1/4 inch of the fruit next to the rind.
Set melon balls and hollow shells aside to drain.
Mix together chicken, celery, onion, and pepper.
Prepare curry-peanut dressing and stir into chicken mixture along with melon balls.
Cover and refrigerate.
