Mint Dressed Spinach Apple Toss

Ingredients
  Powdered fruit pectin 1 3⁄4 Ounce (1 Package)
  Salt 1⁄8 Teaspoon
  Unsweetened pineapple juice 1 Cup (16 tbs)
  Lemon juice 2 Tablespoon
  Sugar 2 Teaspoon
  Sliced green onion 1 Tablespoon
  Chopped mint/1/2 teaspoon dried mint, crushed 1 Tablespoon
  Spinach 10 Ounce, torn
  Apples 2 Medium, cored and cubed
  Cucumber 1 Small, thinly sliced
  Sliced radishes 1⁄3 Cup (5.33 tbs)
Directions

In small bowl combine powdered pectin and salt.
Stir in pineapple juice, lemon juice, and sugar; add onion and mint.
Cover; refrigerate at least 1 hour.
In large bowl combine torn spinach, cubed apple, sliced cucumber, and sliced radishes.
Pour 1/3 cup of the dressing over salad and toss to coat. (Refrigerate remaining dressing.)
