Turkey Dressing

  Butter 1⁄2 Cup (8 tbs)
  Onion 1 Large, finely chopped
  Lean round steak 2 Pound, ground
  Salt 1 Tablespoon
  Pepper 1⁄4 Teaspoon
  Chicken broth 2 Cup (32 tbs)
  Rice 1⁄2 Cup (8 tbs) (Uncle Ben's Brand)
  Celery hearts 2 Cup (32 tbs), chopped
  Raisins 2 Cup (32 tbs)
  Pecans 2 Cup (32 tbs)
  Light cream 1⁄2 Pint

Melt butter in 3-quart scaicepan.
Add onions and saute until soft.
Add ground beef, salt and pepper, and brown.
Add broth.
Stir, and when mixture is very hot, add rice.
Cook, covered, over slow fire for 15 minutes or until rice is soft.
Add celery and cook, covered, for 15-20 more minutes.
Remove from heat.
Add raisins, pecans and light cream.
If dressing becomes too dry, add more cream.
Stir all ingredients together.
The dressing is now prepared to stuff a 10-14 pound turkey.
Any surplus dressing may be cooked in a buttered casserole for approximately 30 minutes at 350°
