Microwave Or Roasted Bell Pepper Dressing

Microwave or roasted bell pepper dressing is a buttermilk vegetable salad dressing. Prepared with microwave cooked green or red bell peppers seeded and processed with paprika, lemon juice and onion powder to taste, the roasted bell pepper dressing is seasoned to taste. Thoroughly blended, it is chilled before using.
Ingredients
  Green bell pepper/Red pepper 1
  Buttermilk 1⁄2 Cup (8 tbs)
  Sugar 2 Teaspoon
  Parsley 1 Teaspoon, chopped
  Lemon juice 3⁄4 Teaspoon
  Paprika 1⁄4 Teaspoon
  Salt 1⁄8 Teaspoon
  Black pepper 1⁄8 Teaspoon
  Onion powder 1⁄8 Teaspoon
Directions

Microwave bell pepper on HIGH (100% power) 5 minutes or until tender.
Cut bell pepper in half and remove seeds.
Pat dry with paper towel.
In blender or food processor blend all ingredients thoroughly.
Chill.
