  Cucumbers 1 1⁄2 Pound
  Salt 1 Teaspoon
  Sugar 1 Teaspoon
  Rice vinegar/White vinegar 1 Tablespoon
  Minced garlic 1 Tablespoon
  Bean noodles 1 Ounce
  Boiling water 3 Cup (48 tbs)
  Soy sauce 1⁄2 Teaspoon
  Sesame oil 1 Teaspoon
  Chili oil 1 Tablespoon

Peel cucumbers.
Cut in half lengthwise.
Scoop out seeds.
Cut cucumber pieces in half .and shred with a cleaver.
Place in a large bowl.
Add salt, sugar, vinegar and garlic, if desired.
Mix well; let stand 1 hour.
Place bean noodles in a bowl with 3 cups boiling water 2 minutes.
Rinse with cold water; drain well.
Chop into 2-inch lengths.
Place on a platter.
Arrange shredded cucumbers on top of bean noodles.
Sprinkle with soy sauce, sesame oil and Chili Oil.
