Mint Dressing

Ingredients
  Olive oil 3 Tablespoon
  Lemon juice 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Freshly ground black pepper 1⁄2 Teaspoon
  Fresh mint 1 Tablespoon, finley chopped
  Sugar 2 Teaspoon
Directions

In a small mixing bowl, combine the olive oil, lemon juice, salt, black pepper, mint and sugar and mix well with a wooden spoon.
Alternatively place all the ingredients in a screw top jar and shake well to blend.
Place the dressing in the refrigerator to chill for at least 30 minutes before serving.
