Ingredients
  Eggs 3
  Fat 2 Cup (32 tbs) (for deep frying)
  Sugar 1 Cup (16 tbs)
  Shortening 2 Tablespoon
  Baking powder 3 Teaspoon
  Salt 1 Teaspoon
  Nutmeg 1⁄2 Teaspoon
  Sifted flour 3 1⁄2 Cup (56 tbs)
  Milk 1 Cup (16 tbs)
  Lemon extract 1⁄2 Teaspoon
Directions

MAKING
1.In a bowl, place the eggs and beat it lightly, then beat in sugar and melted shortening
2.Now sift baking powder, salt and nutmeg with 1 cup flour, then stir this mixture into the egg mixture alternately with milk
3.Add lemon extract and flour to make a soft dough
4.Set aside to chill
5.On a floured board, roll out 3/4 inch thick dough
6.Finally fry in deep fat
7.Once fried completely, drain the doughnuts on unglazed paper

SERVING
8.Serve with coffee

TIPS
A soft dough helps to make light, tender doughnuts when cooked. If you have no thermometer, test the fat for temperature as directed
