Frosted Chocolate Doughnuts
|Sugar||1⁄2 Cup (8 tbs)|
|Mashed potatoes||1⁄2 Cup (8 tbs)|
|Potatoes||1⁄2 Cup (8 tbs), mashed|
|Flour||1 3⁄4 Cup (28 tbs)|
|Baking powder||3 Teaspoon|
|Milk||1⁄3 Cup (5.33 tbs)|
|Oil/Shortening||4 Cup (64 tbs) (For Deep Frying)|
|For chocolate frosting|
|Unsweetened chocolate||1 Ounce|
|Powdered sugar||1 Cup (16 tbs), sifted|
|Sifted powdered sugar||1 Cup (16 tbs)|
|Boiling water||2 Tablespoon|
|Vanilla extract||1⁄4 Teaspoon|
In a large mixer bowl, beat egg until light Beat in sugar.
Melt chocolate and butter or margarine together.
Add to egg mixture.
Stir in potatoes.
Combine flour, baking powder and salt Add milk alternately with flour mixture.
Refrigerate 1 hour.
Preheat oil or shortening in deep-fryer or mini deep-fryer according to manufacturer's directions.
On a lightly floured surface, roll out dough about 3/8 inch thick.
Cut with floured doughnut cutter.
Fry in hot oil or shortening about 2 minutes or until crusty brown.
Drain and cool.
Prepare Chocolate Frosting.
Spread on doughnuts.
Chocolate Frosting: In a medium saucepan, melt butter or margarine and chocolate.
Beat in powdered sugar, boiling water and vanilla.
