Donut Holes

Join Chef Ani Phyo on a delicious journey into donut holes that are raw and vegan. Recipe is from Ani's uncookbook.
Ingredients
  Almonds 1 Cup (16 tbs), dry
  Sea salt 1⁄4 Teaspoon
  Vanilla bean 1 , scraped
  Dried pineapple 1 Cup (16 tbs), chopped finely
  Pitted dates 1 Cup (16 tbs)
  Dried coconut 7 Tablespoon, shredded, divided (5 tablespoons + 2 tbsp for coating)
Directions

MAKING:
1)In a food processor add the almonds and salt and process until coarsely chopped.
2)In a bowl combine the dates, pineapple, vanilla bean seeds, and coconut, and the almond mix and roll into balls.
3)Coat these balls with some more coconut powder.

SERVING:
4)Serve immediately and enjoy!
