|Almonds||1 Cup (16 tbs), dry|
|Sea salt||1⁄4 Teaspoon|
|Vanilla bean||1 , scraped|
|Dried pineapple||1 Cup (16 tbs), chopped finely|
|Pitted dates||1 Cup (16 tbs)|
|Dried coconut||7 Tablespoon, shredded, divided (5 tablespoons + 2 tbsp for coating)|
1)In a food processor add the almonds and salt and process until coarsely chopped.
2)In a bowl combine the dates, pineapple, vanilla bean seeds, and coconut, and the almond mix and roll into balls.
3)Coat these balls with some more coconut powder.
4)Serve immediately and enjoy!
