|Sugar||1⁄2 Cup (8 tbs)|
|Milk||1⁄4 Cup (4 tbs)|
|Salad oil||2 Tablespoon|
|Flour||2 1⁄3 Cup (37.33 tbs), sifted|
|Baking powder||2 Teaspoon|
|Coconut||1⁄2 Cup (8 tbs), flaked|
Beat the eggs with sugar in a bowl until light, then stir in the milk and oil.
Sift dry ingredients together and add to the egg mixture.
Add the coconut and stir until blended.
Chill for several hours.
Roll out on a lightly floured surface 1/2 inch thick and cut with a doughnut cutter.
Fry in deep fat at 375 degrees until brown, then turn and brown on other side.
Drain on paper towels and sprinkle with additional sugar.
