Cattail Molasses Doughnuts

  Eggs 2
  Granulated sugar 1 Cup (16 tbs)
  Molasses 1⁄2 Cup (8 tbs)
  Sour milk 1 Cup (16 tbs)
  Baking soda 1 Teaspoon
  All purpose flour 2 Cup (32 tbs)
  Cattail pollen 1 3⁄4 Cup (28 tbs)
  Powdered cloves 1 Teaspoon
  Powdered ginger 1⁄4 Teaspoon
  Margarine 1 Tablespoon, melted
  Frying oil 2 Cup (32 tbs) (For Deep Frying)

Beat eggs, add sugar and mix well.
Add molasses and sour milk to which soda has been added.
Sift flour, pollen and spices.
Fold flour into liquid along with margarine.
Handle dough as little as possible.
Roll small amount of dough 1/4 thick and cut into rounds with a doughnut cutter.
Deep fry at 360°F., turning frequently until golden brown.

Thanks for promoting "cattail consciousness". There is enough cattail growing wild to feed the planet. As it is, it is causing desertification and other havoc worldwide. Please keep it up!
