Sweet Dough Pies

Ingredients
  All purpose flour 2 Cup (32 tbs)
  Baking powder 1⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
  Egg 1
  Water 1⁄4 Cup (4 tbs)
  Sugar 3 Tablespoon
  Butter/Margarine 1⁄4 Cup (4 tbs), melted and cooled
  Fig filling/One 21 ounce can lemon pie filling 1 Cup (16 tbs)
Directions

In a small mixing bowl stir together flour, baking powder, and salt.
In a medium mixing bowl beat together egg, water, and sugar.
Stir in butter or margarine.
Stir in dry ingredients till mixture forms a ball.
Turn out onto a lightly floured surface.
Knead 10 times.
Divide dough into 8 portions.
Roll each portion to form a 1/4 inch thick circle, about 6 inches in diameter.
Spoon a generous 3 tablespoons filling in the center of each circle.
Moisten edges.
Fold circle in half.
Seal edges with the tines of a fork.
Bake in a 350° oven for 20 to 25 minutes or till golden.
Cool on a wire rack.
Makes 8.
Fig Filling: In a medium saucepan combine 1 cup snipped dried figs and 1 cup water.
Bring to boiling.
Reduce heat.
Cover and simmer 20 minutes.
Remove from heat.
Stir in 1/3 cup light com syrup.
Mix 1/3 cup sugar, 1/4 cup all purpose flour, and dash salt.
Stir into fig mixture.
Cook and stir till thickened and bubbly.
Remove from heat.
Stir in 1 tablespoon lemon juice.
Cool.
