Fried Savory Dough

Hi everyone and welcome to the GialloZafferano kitchen. Today we'll prepare fried Gnocco. This is a traditional food from the Emilia-Romagna region made from a bread dough made with lard, rolled out very thinly, cut into rectangles and fried. Normally they're served filled with sliced meats and cheeses.

MAKING
1) In a bowl, place the yeast, sugar and some water
2) In a another bowl, put the flour and make a well in the ceneter and add the eyast mixture
3) Then add the lard
4) Then add the salt and try to dissolve it all and make it all come together
5) Turn it all together on the floured worktop
6) Knead the dough for a while and then make a cross on the top
7) Cling wrap the dough and leave to rest for an hour
8) Once risen, work it out and roll out to a rectangle sheet and cut into rhomboid sheets of 3-4 inches
9) Pour oil into a pan and bring to a high temperature
10) Put three to four pieces at a time to fry
11) Slice each pieces of the fried gnocchi and serve with cheese, sliced meats or cheese or soft cheese
