|Brown sugar||1⁄2 Cup (8 tbs)|
|Unsalted margarine||1⁄4 Cup (4 tbs)|
|Baking powder||1 Teaspoon|
|Whole wheat pastry flour||3⁄4 Cup (12 tbs)|
|Unbleached flour||3⁄4 Cup (12 tbs)|
|Skim milk||1 Fluid Ounce|
Cream brown sugar, margarine and egg white.
Stir in flours and baking powder.
Chill dough several hours or overnight.
Roll out dough on floured surface.
Cut thirty-six 3" circles.
On half the circles, cut a 1" circle out of middle.
Place a teaspoon of date filling on the cookies without the hole.
Brush edges with skim milk.
Place the cookies with the hole on top of each.
Press edges together.
Bake at 350° for 12 minutes.
