Almond Divinity Squares

Almond Divinity Squares...as the name suggests, these are truly "divine"!! My kids love nuts and I try to incorporate them as much as possible. This snack, more a candy, is one of the few of the many items stocked and kept in my kitchen! A great comfort food, enjoyed by kids and adults alike!
Ingredients
  Egg whites 2
  Sugar 4 Cup (64 tbs)
  Light corn syrup 2⁄3 Cup (10.67 tbs)
  Water 1 Cup (16 tbs)
  Salt 1 Dash
  Vanilla 1 Teaspoon
  Almond extract 1⁄2 Teaspoon
  Walnuts 3⁄4 Cup (12 tbs), chopped
Directions

GETTING READY
1) In an electric mixer bowl, add the egg whites.
2) Allow to stand till it reaches room temperature.
3) Heavily grease a shallow pan.

MAKING
4) In a saucepan, combine sugar, corn syrup, water, and salt.
5) Place a lid and allow to boil.
6) Take off the lid.
7) Continue to cook till the candy thermometer reads 265 degrees or till the mix reaches a hard-ball stage.
8) Beat the egg whites at high speed till stiff, but not dry.
9) While beating, add in the hot syrup in a fine stream.
10) Beat till the candy loses gloss.
11) Beat in the vanilla and almond extract.
12) Stir in the walnuts, mixing by hand.
13) Transfer the candy into the shallow pan.
14) Mark into squares.
15) Cool.

SERVING
16) Cut with a wet knife.
