Lemon Coconut Candy

Here is a unique kind of candy... Lemon Coconut Candy! Served as a snack, this is a great midday sweet to toss into your mouth. A delicious combination of lime gelatin and coconut, along with vanilla, this is a great recipe. I am certain you too enjoy this!
Ingredients
  Sugar 3 Cup (48 tbs)
  Light corn syrup 3⁄4 Cup (12 tbs)
  Hot water 3⁄4 Cup (12 tbs)
  Salt 1⁄4 Teaspoon
  Egg whites 2
  Lime gelatin 3 Ounce
  Vanilla 1 Teaspoon
  Green tinted coconut 3⁄4 Cup (12 tbs)
Directions

GETTING READY
1) Grease the sides of a heavy 2-quart saucepan.

MAKING
2) In the saucepan, add sugar, corn syrup, water, and salt.
3) Cook, while stirring, and bring to a boil.
4) Cook to a hard-ball stage, without stirring.
5) In a bowl, add the egg whites and beat till soft peaks.
6) Slowly add in the gelatin, beating to stiff peaks.
7) Beat in the vanilla.
8) Slowly pour the hot syrup over the egg whites, beating till the candy holds soft peaks.
9) Drop by teaspoonfuls onto a waxed paper.

SERVING
10) Sprinkle with coconut and serve.
