This ham salad recipe is not a copycat recipe, but it is from a woman that I met, and I thought she had the most amazing ham salad, so I wanted to share this one with you. Her recipe is unusual because she starts with a package of ham of the lunch meat variety, she cooks the ham slices with brown sugar before making this delightful recipe.
Ham slices | 16 Ounce | |
Brown sugar | 1 Tablespoon | |
Grated red onion | 1 1/2 Tablespoon | |
Gherkin pickles | 1 1/2 Tablespoon , chop | |
Pickle juice | 2 Teaspoon | |
Mayonnaise | 2 Tablespoon ((not Miracle Whip)) | |
Salt | To Taste | |
Ground black pepper | 1/2 Teaspoon |
MAKING:
1.Place ham slices into a pot add 1 tablespoon of brown sugar. Add enough water to just cover the ham. Simmer for about 20 minutes. Remove ham from water, and allow to cool.
2.In a food processor add ham slices, red onion, gherkin pickles, pickle juice, mayonnaise to the food processor. Pulse several times. Taste, and season with salt and pepper.
