VINDALHO VINDALOO VINDHIAL Masala - Authentic Spice Blend For GOAN Curry

Vindalho, Vindaloo or Vindhial as it's known in different communities, is a dish inspired by the Portuguese. It's belnd of spices though is distinctly Goan. Red Chillies are ground together with other spices, lots of garlic and ginger and vinegar. This masala is perfect to cook Pork, Chicken or even Fish.

Ingredients

Dried red chiles 20
Cinnamon stick 1 Inch
Cloves 6
Cumin seeds 1 Teaspoon
Black mustard seeds 1/4 Teaspoon
Peppercorns 10
Turmeric 1/2 Teaspoon
Garlic 6 Clove (30 gm)
Ginger sticks 1 Inch
Goa vinegar/Red wine vinegar /malt vinegar 1/4 Cup (4 tbs)
Water 1/2 Cup (8 tbs) (as needed)

Directions

MAKING:

1.In a food processor, grind red chiles into a coarse powder.

2.Add cinnamon, cloves, cumin, mustard seeds, peppercorns, turmeric and process.

3.Add ginger, garlic, vinegar and process until smooth paste.

4.Add water to adjust consistency.

SERVING:

5.Make spicy vindaloo gravy, serve and enjoy!
