Broccoli And Cheese Egg White Scramble On Whole-Wheat English Muffin

This egg white scramble is a great way to get vitamin-packed broccoli onto your breakfast table. If youre pressed for time in the morning, buy a package of broccoli florets in the produce section instead of starting with a whole head of broccoli.

Ingredients

Finely chopped broccoli 1 1/2 Cup (24 tbs)
Water 1/4 Cup (4 tbs)
Egg white 8 Large
Skim milk 1/2 Cup (8 tbs)
Ground black pepper 1/4 Teaspoon
Whole wheat english muffins 2 , split
Shredded fat free cheddar cheese 1/4 Cup (4 tbs)
Cooking spray 1

Directions

MAKING:

1.Toast muffin and set aside.

2.Heat a skillet and grease with cooking spray.

3.Add broccoli, water and stir for 4-5 minutes or until soft. Once done reserve separately.

4.In a bowl, combine egg whites, milk, pepper and whisk well until combined.

5.Grease cooking spray into same skillet and add egg mixture into it.

6.Stir continuously and scramble well.

7.Add cheese, broccoli mixture and stir well.

8.Top over toasted muffin.
