Kosha Mangsho is one of the popular Spicy Mutton preparation, generally made with mutton. But for popularity and availability of the ingredients, it can also be made with chicken, egg, fish or paneer.
Mangsho means meat and kosha is a cooking technique means mutton should be slow cooked in hot and spicy gravy and then simmered so that the meat coated in thick rich gravy and become juicy. This is almost like semi dry mutton that has enough gravy to coat the mutton. For this technique the dish got amazing darker brown color which makes you more hungry. There is a famous food joint in Golbari, Kolkata. Their Kosha Mangsho is world famous. I tried to make like them. Hope you will enjoy it.
