Stir Fried Chicken In Lettuce Cups - Easy Weeknight Dinners

Salad may be a tough sell for some little ones, but these lettuce cups are kid friendly and a whole new way for them of looking at leafy greens. They're crunchy, and in combination with the stir-fried chicken with herbs and a slightly sweet sauce it's really something special.

Ingredients

Low sodium soy sauce/Tamari 1/4 Cup (4 tbs)
Honey 2 Tablespoon
Minced cilantro 2 Tablespoon
Oil 1 Tablespoon
Onion 1 Small , dice
Bell pepper 1 ((red, orange or yellow))
Garlic 1 Clove (5 gm) , mince
Minced ginger 1 Teaspoon
Ground chicken/Turkey 1 Pound
Salt 1/4 Teaspoon
Lettuce cups 8 ((Bibb or Iceberg))

Directions

MAKING:

1.In a bowl, combine soy sauce, honey and cilantro. Set aside.

2.In a large saute pan, heat oil and saute onion over medium heat for 2 minutes.

3.Add bell pepper and cook for 2 more minutes.

4.Add garlic, ginger, chicken and saute for 7 minutes.

5.Add soy sauce mixture, salt and cook for 2 minutes.

6.Fill lettuce cups and roll it as shown in the video.

SERVING:

7.Serve and enjoy!
