How to Make Cauliflower Fried Rice

If you are not a fan of zucchini noodles or spaghetti squash, this is a great alternative.
Ingredients
  Cauliflower 1
  Onion 1
  Carrot 1⁄2 Cup (8 tbs)
  Brussel sprout 1⁄2 Cup (8 tbs)
  Peas 1⁄2 Cup (8 tbs)
  Egg 2
  Scallions 1 Tablespoon
  Soy sauce 1⁄4 Cup (4 tbs)
  Brown sugar 1 Tablespoon
  Chili garlic sauce 1 Teaspoon
Directions

MAKING

1. Sautée your veggies in oil about 5 mins on high (evoo works just fine). In a small bowl, make the sauce while your veggies cook by mixing all sauce ingredients.

2. Stir the rice in with veggies and cook another 5 mins. Pour your sauce on top.

3. Stir in eggs.

SERVING
4. Garnish with scallions & enjoy.
