Zucchini Onion Dip
|Olive oil/Vegetable oil||2 Teaspoon|
|Diced onion||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm)|
|Sour cream||1⁄2 Cup (8 tbs)|
|Chopped zucchini||2 Cup (32 tbs)|
|Lemon juice||1 Dash|
In 8-inch nonstick skillet heat oil; add onion and garlic and saute until onion is translucent.
Add zucchini and saute, stirring constantly, until softened, about 5 minutes.
Transfer onion mixture to work bowl of food processor; add salt, pepper, and lemon juice and process until pureed.
Pour mixture into bowl and stir in sour cream; cover and refrigerate until chilled.
